LaVerne's Stuffed Cabbage (Galumpki)
4 c. cooked white rice (2 c. dry)
1 1/4 lb. ground sirloin
1 medium head of cabbage
2 cans tomato soup
Mix together the rice and raw ground beef. Add salt, pepper and other seasonings as desired. Boil the head of cabbage (after coring it) until leaves are soft and pliable. Add 2 large tablespoons of the rice and meat mixture to each leaf then fold over sides and ends to make a pocket. Arrange stuffed cabbage in a casserole dish. Mix cans of tomato soup with about a half a can of water and pour over stuffed cabbage. Cover and bake in a 350 degree oven for one hour.
